Ingredients
- 1 lb large fresh strawberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 cup heavy cream (or milk for a lighter filling)
- 1/2 cup fresh blueberries
Instructions
- Wash and dry the strawberries. Using a small paring knife or a melon baller, carefully core out the center of each strawberry, creating a cavity for the cheesecake filling. Try to create a flat base on each strawberry so they stand upright.
- In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- Add the heavy cream (or milk) to the cream cheese mixture and beat until the filling is light, fluffy, and well combined.
- Transfer the cheesecake filling to a piping bag fitted with a star tip (or a Ziploc bag with a corner snipped off).
- Pipe the cheesecake filling into the hollowed-out strawberries, filling them generously.
- Arrange the filled strawberries on a serving platter.
- Top each cheesecake-filled strawberry with a few fresh blueberries.
- Chill for at least 30 minutes before serving for best results, allowing the filling to firm up slightly.
