- 1 tbsp olive oil
- 1 lb ground beef (80/20 lean recommended)
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (6 oz) can tomato paste
- 3 cups beef broth
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 2 cups elbow macaroni, uncooked
- 1 cup shredded cheddar cheese (or mozzarella), plus more for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess fat.
- Add chopped onion to the pot with the beef and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Stir in the tomato sauce, diced tomatoes (with their liquid), tomato paste, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer.
- Add the uncooked elbow macaroni to the pot and stir well to ensure it’s fully submerged in the liquid. Cover the pot and reduce heat to medium-low.
- Cook for 12-15 minutes, or until the macaroni is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
