Easy Mongolian Beef Recipe – Savory & Quick

Ingredients
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 2 tbsp cornstarch, divided
- 2 tbsp vegetable oil (or canola/peanut oil)
- 1 tbsp fresh ginger, minced
- 4 cloves garlic, minced
- 1/2 cup low sodium soy sauce
- 1/2 cup packed light brown sugar
- 1/4 cup water (or beef broth)
- 1 tsp rice vinegar (optional, for brightness)
- 1 bunch green onions, chopped into 1-inch pieces
- Cooked rice, for serving (optional)
- Sesame seeds, for garnish (optional)
Instructions
- Pat the thinly sliced beef dry with paper towels. In a medium bowl, toss the beef with 1 tablespoon of cornstarch until evenly coated. Set aside.
- In a separate small bowl, whisk together the soy sauce, brown sugar, water, and rice vinegar (if using). Add the remaining 1 tablespoon of cornstarch and whisk until smooth. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the beef in a single layer (you may need to do this in batches to avoid overcrowding) and cook for 2-3 minutes per side, until browned and cooked through. Remove the beef from the skillet and set aside on a plate.
- Reduce the heat to medium. Add the minced ginger and garlic to the skillet and sauté for 30 seconds until fragrant, being careful not to burn them.
- Pour the prepared sauce mixture into the skillet. Bring to a simmer, stirring constantly, until the sauce thickens and becomes glossy, about 1-2 minutes.
- Return the cooked beef to the skillet and toss to coat evenly in the sauce. Stir in most of the chopped green onions, reserving some for garnish.
- Remove from heat. Serve immediately over hot steamed rice, garnished with the remaining green onions and a sprinkle of sesame seeds, if desired.
