Ingredients

  • 1 pound (450g) penne or your favorite pasta
  • 8-12 ounces (225-340g) beef bacon, diced
  • 1 tablespoon olive oil (if needed)
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1.5 cups (360ml) heavy cream
  • 0.5 cup (120ml) chicken or vegetable broth
  • 1 cup (100g) grated Parmesan cheese, plus more for serving
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, chopped, for garnish
  • Optional: Red pepper flakes for a hint of heat

Instructions

  1. Cook the pasta according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining. Set aside.
  2. While the pasta cooks, place the diced beef bacon in a large skillet or Dutch oven over medium heat. Cook, stirring occasionally, until the bacon is crispy. Remove the bacon with a slotted spoon and set aside on a paper-towel-lined plate. Drain most of the bacon fat from the skillet, leaving about 1 tablespoon.
  3. If needed, add 1 tablespoon of olive oil to the skillet. Add the chopped onion and cook over medium heat until softened and translucent, about 3-5 minutes.
  4. Add the minced garlic and cook for another 1 minute until fragrant, being careful not to burn it.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, then reduce heat to low and let it thicken slightly for 3-5 minutes.
  6. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and black pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  7. Add the cooked pasta to the skillet with the sauce and toss to coat evenly. Stir in about two-thirds of the crispy beef bacon.
  8. Serve immediately, garnished with the remaining crispy beef bacon, fresh chopped parsley, and extra Parmesan cheese. Enjoy!
