  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 2 cups peeled, cored, and finely diced apples (about 2 medium apples, like Honeycrisp or Gala)
  • For optional crumble topping:
  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon cold unsalted butter, cut into small pieces
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper for easy removal.
  2. In a large bowl, whisk together the 2 cups all-purpose flour, 1 cup granulated sugar, 3/4 tablespoon of the ground cinnamon, baking soda, salt, and nutmeg (if using).
  3. In a separate medium bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix with a spoon or spatula until just combined. Be careful not to overmix; a few small lumps are perfectly fine.
  5. Gently fold in the diced apples until they are evenly distributed throughout the batter.
