Soft Chewy Lemon Cookies-Easy & Delicious Recipe

Ingredients

  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar, plus ¼ cup extra for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest (from 2-3 lemons)
  • ½ cup (70g) powdered sugar (optional, for outer coating)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. In a large bowl, using an electric mixer, cream together the softened butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined. Stir in the fresh lemon juice and lemon zest.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes (or up to 2 hours). Chilling helps prevent spreading and enhances the chewy texture.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Place the extra ¼ cup of granulated sugar and the ½ cup of powdered sugar (if using) into separate shallow bowls for rolling.
  8. Scoop the chilled dough by rounded tablespoonfuls (about 1.5-inch balls). Roll each ball first in granulated sugar, then generously in powdered sugar (if using).
  9. Place the coated cookie dough balls about 2 inches apart on the prepared baking sheets.
  10. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still soft and slightly puffed. Do not overbake, as they will continue to set as they cool.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
