Ingredients

  • 2 cups Basmati or Jasmine rice, rinsed thoroughly
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for a kick)
  • 4 cups vegetable broth (or chicken broth)
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/4 cup fresh parsley or cilantro, chopped (for garnish)
  • Juice of 1/2 lemon (optional)
  • 1/4 cup toasted almonds or cashews (optional, for garnish)

Instructions

  1. Rinse the rice under cold running water until the water runs clear; drain well and set aside.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Add the minced garlic and diced red bell pepper to the pot. Cook for another 3-4 minutes until the bell pepper starts to soften and the garlic is fragrant.
  4. Stir in the turmeric powder, ground cumin, paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly, allowing the spices to toast and become fragrant.
  5. Add the rinsed rice to the pot and stir to coat all the grains with the spices and oil. Toast the rice for 2-3 minutes.
  6. Pour in the vegetable broth, then add salt and black pepper. Stir gently to combine. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
  8. After 15 minutes, stir in the frozen mixed vegetables. Cover again and cook for another 5 minutes, or until all the liquid is absorbed and the rice is tender.
  9. Remove the pot from the heat and let it rest, still covered, for 5-10 minutes. This allows the rice to steam and become perfectly fluffy.
  10. Fluff the rice with a fork. Stir in the fresh parsley or cilantro and the lemon juice (if using). Garnish with toasted almonds or cashews if desired, and serve warm.
