Ingredients
- 1/2 cup rolled oats (old-fashioned)
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup fresh or frozen blueberries
- 1 tablespoon maple syrup or honey (adjust to taste)
- 1/2 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon baking powder
- Pinch of salt
- 1/4 teaspoon vanilla extract (optional)

Instructions
- Preheat your oven to 375°F (190°C) and lightly grease an oven-safe ramekin or small baking dish (about 8-10 oz).
