- 1 tsp baking powder
- ½ tsp salt
- ½ cup (1 stick) unsalted butter, softened

- ½ cup whole milk (or buttermilk for extra moisture)
- Zest of 1 large lemon
- 2 tbsp fresh lemon juice
- 1 cup fresh or frozen blueberries (if frozen, do not thaw)
- FOR THE LEMON GLAZE:
- 1 ½ cups powdered sugar
- 3-4 tbsp fresh lemon juice

- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper leaving an overhang on the long sides for easy removal.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and 2 tablespoons of fresh lemon juice.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Gently fold in the blueberries. If using frozen blueberries, do not thaw them; you can toss them lightly with a tablespoon of flour before adding to help prevent sinking.
