Easy Thai Peanut Chicken Wraps – Quick & Flavorful

Ingredients

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great!)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons lime juice (freshly squeezed preferred)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sriracha (or more, to taste)
  • 1/4 cup warm water (or coconut milk, for creamier sauce)
  • 12 large flour tortillas or large lettuce leaves (butter lettuce, romaine, or green leaf)
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, thinly sliced
  • 1/4 cup chopped roasted peanuts, for garnish (optional)

Instructions

  1. Prepare the chicken: If not already cooked, cook chicken breasts or thighs and then shred or dice them. Set aside.
  2. Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey (or maple syrup), rice vinegar, grated ginger, minced garlic, and sriracha. Gradually whisk in the warm water (or coconut milk) until the sauce is smooth and reaches your desired consistency. It should be thick but pourable. Taste and adjust seasonings if needed (add more sriracha for spice, lime for tang, or honey for sweetness).
  3. Combine Chicken and Sauce: In a large bowl, combine the shredded chicken with about half of the peanut sauce. Toss until the chicken is well coated. Reserve the remaining sauce for drizzling.
  4. Prepare the Wraps: Warm the tortillas according to package directions, if using. If using lettuce leaves, wash and pat them dry.
  5. Assemble the Wraps: Lay out a tortilla or lettuce leaf. Spoon a generous amount of the peanut chicken mixture down the center. Top with shredded carrots, sliced red bell pepper, fresh cilantro, and sliced green onions.
  6. Serve: Roll up the wraps tightly. Serve immediately with extra peanut sauce on the side for dipping or drizzling, and garnish with chopped peanuts if desired.
