Easy Sweet Potato Gnocchi Recipe – Delicious Homemade Pasta

  • 1.5 – 2 cups (180g – 240g) all-purpose flour, plus more for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the sweet potato several times with a fork, then place it on a baking sheet. Roast for 45-60 minutes, or until very tender when pierced. Alternatively, you can boil or steam the sweet potato until soft.
  2. Once cooked, let the sweet potato cool slightly until it’s comfortable to handle. Peel the skin and mash the flesh thoroughly with a fork or potato ricer until very smooth. It’s crucial to remove as much moisture as possible, so if the mash seems wet, spread it on a baking sheet and bake for another 10-15 minutes to dry it out a bit.
  3. Transfer the mashed sweet potato to a large bowl. Add the beaten egg, salt, and nutmeg (if using). Mix well to combine.
  4. Gradually add 1.5 cups of flour to the sweet potato mixture, mixing with a wooden spoon or your hands until a soft, slightly sticky dough forms. Avoid overmixing. If the dough is too sticky, add the remaining flour a little at a time until it’s workable but still soft.
  5. Lightly flour a clean work surface. Turn the dough out and gently knead for about 1-2 minutes until just combined and smooth. Do not overknead, or your gnocchi will be tough.
  6. Divide the dough into 4-6 equal portions. Roll each portion into a long rope, about 3/4 inch (2 cm) thick. Cut the ropes into 1-inch (2.5 cm) pieces.
  7. Optional: For classic gnocchi ridges, gently roll each piece over the tines of a fork or a gnocchi board. This creates grooves that will hold sauce beautifully. Lightly dust the finished gnocchi with flour and place them on a parchment-lined baking sheet, ensuring they don’t touch.
