Red White Blue Cheesecake Strawberries-Easy Recipe

With a creamy no-bake cheesecake filling nestled inside fresh strawberries and adorned with blueberries, they’re as delicious as they are beautiful.

Ingredients

  • 1 lb large fresh strawberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream (or milk for a lighter filling)
  • 1/2 cup fresh blueberries

Instructions

  1. Wash and dry the strawberries. Using a small paring knife or a melon baller, carefully core out the center of each strawberry, creating a cavity for the cheesecake filling. Try to create a flat base on each strawberry so they stand upright.
  2. In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  3. Add the heavy cream (or milk) to the cream cheese mixture and beat until the filling is light, fluffy, and well combined.
  4. Transfer the cheesecake filling to a piping bag fitted with a star tip (or a Ziploc bag with a corner snipped off).
  5. Pipe the cheesecake filling into the hollowed-out strawberries, filling them generously.
  6. Arrange the filled strawberries on a serving platter.
  7. Top each cheesecake-filled strawberry with a few fresh blueberries.
  8. Chill for at least 30 minutes before serving for best results, allowing the filling to firm up slightly.
