Ingredients
- 2 cups Basmati or Jasmine rice, rinsed thoroughly
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tsp turmeric powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional, for a kick)
- 4 cups vegetable broth (or chicken broth)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1/4 cup fresh parsley or cilantro, chopped (for garnish)
- Juice of 1/2 lemon (optional)
- 1/4 cup toasted almonds or cashews (optional, for garnish)
Instructions
- Rinse the rice under cold running water until the water runs clear; drain well and set aside.
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the minced garlic and diced red bell pepper to the pot. Cook for another 3-4 minutes until the bell pepper starts to soften and the garlic is fragrant.
- Stir in the turmeric powder, ground cumin, paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly, allowing the spices to toast and become fragrant.
- Add the rinsed rice to the pot and stir to coat all the grains with the spices and oil. Toast the rice for 2-3 minutes.
- Pour in the vegetable broth, then add salt and black pepper. Stir gently to combine. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
- After 15 minutes, stir in the frozen mixed vegetables. Cover again and cook for another 5 minutes, or until all the liquid is absorbed and the rice is tender.
- Remove the pot from the heat and let it rest, still covered, for 5-10 minutes. This allows the rice to steam and become perfectly fluffy.
- Fluff the rice with a fork. Stir in the fresh parsley or cilantro and the lemon juice (if using). Garnish with toasted almonds or cashews if desired, and serve warm.
