Homemade Fruit Pâtes – No Corn Syrup Recipe

This recipe brings the delightful chew and intense fruit flavor of traditional pâtes de fruits directly to you, using simple ingredients. Ingredients
- 300g (approx. 1 ¼ cups) fruit purée (raspberry, mango, apricot, or passion fruit work beautifully)
- 400g (approx. 2 cups) granulated sugar, plus extra for coating
- 15g (approx. 2 tablespoons) high methoxyl pectin powder (e.g., apple pectin)
- 30ml (approx. 2 tablespoons) fresh lemon juice
Instructions
- Lightly grease an 8×8 inch (20×20 cm) square pan with a neutral oil or line with parchment paper, leaving an overhang on the sides for easy removal. Set aside.
- In a small bowl, whisk together the pectin powder with about 2 tablespoons of the granulated sugar. This helps prevent clumping when added to the fruit.
- In a medium saucepan, combine the fruit purée and the pectin-sugar mixture. Heat over medium-low heat, stirring constantly, until the mixture comes to a gentle simmer.
- Gradually add the remaining granulated sugar, stirring continuously until all the sugar is completely dissolved.
- Increase the heat to medium-high and bring the mixture to a rolling boil. Continue to cook, stirring frequently, until the mixture reaches 106-108°C (223-226°F) on a candy thermometer. This can take 15-25 minutes. The mixture will thicken considerably.
- Once the target temperature is reached, remove the saucepan from the heat and stir in the fresh lemon juice.
- Immediately pour the hot fruit mixture into the prepared pan, spreading it evenly with an offset spatula if needed.
- Let the pâtes de fruits set at room temperature for at least 4-6 hours, or preferably overnight, until completely firm. Do not refrigerate, as this can make them sticky.
- Once set, lift the slab out of the pan using the parchment paper overhang. Place it on a clean cutting board and cut into 1-inch (2.5 cm) squares or desired shapes.
- Roll each piece generously in granulated sugar until fully coated.
- Store homemade pâtes de fruits in an airtight container at room temperature for up to 2-3 weeks, separating layers with parchment paper if stacking.
