Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ¾ cup (150g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (170g) chocolate chips (milk, semi-sweet, or dark)
  • ½ cup (60g) all-purpose flour
  • ¼ cup (25g) unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (85g) chocolate chips or chunks

Instructions

  1. **Brown the Butter:** In a light-colored saucepan, melt the 1 cup of unsalted butter over medium heat. Continue cooking, stirring occasionally, until the butter turns amber, smells nutty, and brown bits form at the bottom. Immediately pour the browned butter into a heatproof bowl. Let it cool for 10-15 minutes.
  2. **Prepare Cookie Dough:** In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, combine ½ cup of the cooled browned butter (reserving the remaining ½ cup for the brownies), granulated sugar, and brown sugar. Beat with an electric mixer until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Stir in the 1 cup of chocolate chips. Set aside.
  6. **Prepare Brownie Batter:** In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  7. In a large bowl, combine the remaining ½ cup of cooled browned butter and granulated sugar. Whisk well until combined.
  8. Whisk in the 2 large eggs and vanilla extract until smooth and glossy.
  9. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the ½ cup of chocolate chips or chunks.
  10. **Assemble and Bake:** Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment paper.
  11. Evenly press the brown butter chocolate chip cookie dough into the bottom of the prepared pan.
  12. Carefully spread the brownie batter over the cookie dough layer. You can use an offset spatula or the back of a spoon.
  13. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs, but not wet batter. Be careful not to overbake.
  14. **Cool and Serve:** Let the brookies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Cut into squares and enjoy!
