Ingredients
- 1 pound penne or rotini pasta
- 2 cups cooked chicken, shredded or diced

- 1-1.5 cups ranch dressing (store-bought or homemade)
- 1 pint cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1 cup bell pepper (any color), diced
- 1 cup frozen corn, thawed and drained
- 1.5 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- Fresh parsley or chives, chopped (for garnish, optional)
Instructions
- Cook pasta according to package directions until al dente. Drain, rinse with cold water to stop cooking and cool down, then set aside in a large bowl.
- While pasta cooks, heat a large skillet over medium heat. Add bacon slices and cook until crispy. Remove bacon, drain on paper towels, then crumble once cooled. Set aside.
- In the same skillet (drain most of the bacon fat, leaving about 1 tablespoon), add ground beef. Cook over medium heat, breaking it up with a spoon, until no longer pink. Drain any excess fat. Season with garlic powder, onion powder, salt, and pepper. Set aside to cool slightly.
