- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 lb large shrimp, peeled and deveined (tails on or off)
- 1/2 tsp salt, divided
- 1/4 tsp black pepper, divided
- 1/2 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 (15 oz) can creamed corn
- 1/2 cup milk (whole or 2%)
- 1/4 cup chicken or vegetable broth
- Pinch of cayenne pepper (optional, for a kick)
- 2 tbsp fresh parsley, chopped, for garnish
Instructions
- Pat the shrimp dry with paper towels. Season with 1/4 tsp salt and 1/8 tsp black pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and shimmering, add the seasoned shrimp in a single layer. Cook for 1-2 minutes per side, until pink and just cooked through. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked shrimp from the skillet and set aside.
- Reduce the heat to medium. Add the finely diced onion to the same skillet and cook for 3-5 minutes, or until softened and translucent, scraping up any browned bits from the bottom of the pan.
- Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
- Pour in the canned creamed corn, milk, chicken broth, remaining 1/4 tsp salt, 1/8 tsp black pepper, and the pinch of cayenne pepper (if using). Stir well to combine.
