Refreshing Watermelon Cake Recipe- Summer Delight

Beat the summer heat with this incredibly refreshing Watermelon Cake! Ingredients

  • 1 large, seedless watermelon
  • 2 cups heavy whipping cream, very cold
  • 1/2 cup powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 kiwi, peeled and sliced
  • Fresh mint leaves, for garnish
  • Optional: Toasted slivered almonds or shredded coconut for decoration

Instructions

  1. Prepare the watermelon: Lay the watermelon on its side. Using a sharp knife, carefully slice off both ends. Stand the watermelon upright and carefully slice away the rind in strips from top to bottom, exposing the red flesh. Trim the sides to create a cylindrical “cake” shape, removing any remaining white pith. Pat the watermelon very dry with paper towels to help the frosting adhere.
  2. Prepare the whipped cream: In a large, chilled mixing bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat, or it will turn into butter.
  3. Frost the watermelon: Place the dried watermelon cylinder on a serving platter. Generously spread the whipped cream over the top and sides of the watermelon, creating an even layer. You can use an offset spatula or the back of a spoon.
  4. Decorate the cake: Arrange the fresh berries, sliced kiwi, and mint leaves artfully over the top and around the base of the watermelon cake. If desired, gently press slivered almonds or shredded coconut onto the sides of the cake for extra texture and flavor.
  5. Chill and serve: Refrigerate the watermelon cake for at least 30 minutes before serving to allow the whipped cream to set slightly. Slice and serve immediately for a truly refreshing summer dessert!
