Ingredients
- 1 baguette or crusty artisan bread, sliced into 1/2-inch thick pieces
- 4-5 ripe Roma tomatoes, diced (about 2 cups)
- 2-3 cloves garlic, minced, plus 1 whole peeled clove for rubbing
- 1/4 cup fresh basil leaves, finely chopped
- 3 tablespoons extra virgin olive oil, plus more for drizzling
- 1 tablespoon balsamic glaze (optional, for drizzling)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the sliced baguette pieces in a single layer on a baking sheet. Drizzle lightly with olive oil.
- Bake for 5-8 minutes, or until the bread is lightly golden and crisp. Remove from oven and, while still warm, rub each slice with the whole peeled garlic clove for flavor. Set aside.
- In a medium bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, 3 tablespoons of extra virgin olive oil, salt, and freshly ground black pepper. Stir gently to combine.
- Spoon a generous amount of the tomato mixture onto each toasted baguette slice.
