Ingredients

  • For the Pistachio Cake:
  • 1 ½ cups (180g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) whole milk
  • ¾ cup (90g) finely ground shelled pistachios
  • For the Raspberry Filling:
  • 1 ½ cups (180g) fresh or frozen raspberries
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1 teaspoon fresh lemon juice
  • For the Cream Cheese Frosting:
  • 8 ounces (226g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 3-4 cups (360-480g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons whole milk or heavy cream (optional, for consistency)
  • For Garnish (optional):
  • Extra fresh raspberries
  • Chopped pistachios

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper. Alternatively, use three 6-inch pans for a taller cake.
  2. 2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. 3. In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. 4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. 5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. 6. Gently fold in the finely ground pistachios until evenly distributed.
  7. 7. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.

  12. 12. Gradually add the sifted powdered sugar, one cup at a time, beating until smooth after each addition. Mix in the vanilla extract. If the frosting is too thick, add milk or cream one tablespoon at a time until desired consistency is reached.
  13. 13. To assemble the cake: Place one cooled cake layer on a serving plate. Spread about half of the raspberry filling evenly over the top, leaving a small border around the edge.
  14. 14. Spread a layer of cream cheese frosting over the raspberry filling. Place the second cake layer on top. Repeat with the remaining raspberry filling and another layer of frosting (if using three layers, repeat for the third layer as well).
