Ingredients

  • 2 cups rolled oats (uncooked)
  • 1/2 cup packed light brown sugar (or maple syrup)
  • 2 large eggs

  • 1/4 cup milk (any kind) or orange juice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger (optional)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1.5 cups grated carrots (about 2-3 medium carrots)
  • Optional: 1/2 cup chopped walnuts or pecans, 1/4 cup raisins
  • For Simple Cream Cheese Frosting:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour (using oat flour or regular flour) an 8×8 inch square baking pan or a 9-inch round cake pan.
  2. If using rolled oats, blend them in a food processor or high-speed blender until they resemble a fine flour. Set aside.
  3. In a large bowl, whisk together the brown sugar (or maple syrup), eggs, applesauce (or oil), milk, and vanilla extract until well combined.
  4. In a separate medium bowl, combine the oat flour, baking powder, baking soda, cinnamon, ginger (if using), nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the grated carrots. If you’re adding walnuts/pecans or raisins, fold them in now.
  7. Pour the batter into your prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  11. Gradually add the powdered sugar, beating until well combined and fluffy. Stir in the vanilla extract.
