Ingredients

  • 2 medium zucchini, trimmed and sliced into 1/2-inch half-moons
  • 8 oz cremini (baby bella) mushrooms, wiped clean and sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 small onion, chopped (optional)
  • 1/2 teaspoon dried thyme (or Italian seasoning)
  • 1/4 teaspoon red pepper flakes (optional, for a kick)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chopped onion (if using) and cook for 2-3 minutes until softened and translucent.
  3. Add sliced mushrooms to the skillet. Cook, stirring occasionally, for 5-7 minutes until they release their liquid and start to brown nicely.
  4. Stir in minced garlic and cook for another minute until fragrant.
  5. Add the sliced zucchini, dried thyme, red pepper flakes (if using), salt, and black pepper to the skillet.
  6. Cook for 5-8 minutes, stirring occasionally, until the zucchini is tender-crisp. Avoid overcooking to maintain a slight bite and bright green color.
  7. Taste and adjust seasoning as needed.
  8. Remove the skillet from heat, stir in the fresh chopped parsley, and serve immediately. Enjoy!
