Ingredients

  • 2 large English cucumbers (or 4-5 Persian cucumbers), thinly sliced
  • 1 teaspoon salt (for draining cucumbers)
  • 1/2 cup mayonnaise (Japanese mayo like Kewpie works best)
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sugar (or maple syrup)
  • 1/2 teaspoon Sriracha or chili garlic sauce (optional, adjust to taste)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • Optional: Crushed peanuts or red pepper flakes for extra crunch/spice

Instructions

  1. Thinly slice the cucumbers using a mandoline, food processor, or sharp knife. Place the slices in a colander, sprinkle with 1 teaspoon of salt, and toss gently. Let them sit for 15-20 minutes to draw out excess water.
  2. After 15-20 minutes, firmly squeeze the cucumbers with your hands or press them against the colander to remove as much liquid as possible. Pat them dry with paper towels. This step is crucial for preventing a watery salad.
  3. In a medium bowl, whisk together the mayonnaise, rice vinegar, soy sauce, toasted sesame oil, grated ginger, minced garlic, sugar, and Sriracha (if using) until smooth and well combined. Taste and adjust seasonings as needed.
  4. Add the drained and dried cucumber slices to the bowl with the dressing. Toss gently until all the cucumbers are evenly coated.
  5. For best results, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, transfer the salad to a serving bowl. Garnish generously with fresh cilantro and toasted sesame seeds. Optionally, add crushed peanuts or a sprinkle of red pepper flakes for extra texture and heat.
