Imagine the best parts of a rich, fudgy brownie combined with the delightful chew of a cookie, then elevated with a touch of gourmet sea salt. These Salted Brownie Cookies deliver exactly that – a truly decadent treat that’s impossible to resist. Perfect for chocolate lovers, they’re surprisingly simple to make and utterly irresistible.

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed for darker color)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine sea salt (for the dough)
  • 1 cup (170g) semi-sweet chocolate chips or chunks
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and light brown sugar until smooth and well combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and fine sea salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Be careful not to overmix.
  6. Fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
  7. Using a 1.5-inch cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  8. Bake for 9-11 minutes, or until the edges are set and the centers still look slightly soft and gooey. Do not overbake for maximum chewiness.
  9. Immediately after removing from the oven, generously sprinkle each cookie with flaky sea salt.
  10. Let the cookies cool on the baking sheets for 5-10 minutes before transferring them to a wire rack to cool completely. Enjoy!
