Ingredients

  • 2 packs (3 oz each) instant ramen noodles (discard seasoning packets for this recipe, or save for another use)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional, for extra umami)
  • 1 tsp brown sugar or honey
  • 1/2 tsp gochujang or sriracha (adjust to your spice preference)
  • 1/2 tsp sesame oil
  • 1 clove garlic, minced
  • 1/2 inch fresh ginger, grated (optional)
  • 1 tbsp cooking oil (vegetable or canola)
  • 1/2 cup chopped vegetables (e.g., sliced mushrooms, bell peppers, spinach, or bok choy)
  • 1 large egg (optional, for frying or soft-boiling)
  • 2-3 tbsp water (from cooking noodles, or fresh water)
  • Green onions, sliced (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Cook the ramen noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to package directions, typically 2-3 minutes, until just tender. Drain the noodles, reserving about 1/4 cup of the noodle cooking water.
  2. Prepare the sauce: While the noodles are cooking, whisk together the soy sauce, oyster sauce (if using), brown sugar, gochujang/sriracha, and sesame oil in a small bowl. Set aside.
  3. Sauté aromatics and vegetables: Heat 1 tbsp cooking oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger (if using) and sauté for 30 seconds until fragrant. Add your chopped vegetables and cook for 2-3 minutes until slightly tender-crisp.
  4. Cook the egg (optional): If adding an egg, push the vegetables to one side of the pan. Crack the egg into the empty space and fry it sunny-side up, scramble it, or cook it to your desired doneness. Remove the egg from the pan once cooked.
