- 3 very ripe medium bananas, mashed (about 1 cup)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, melted and cooled
- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 2 large eggs, room temperature
- 2 tablespoons honey
- 1 teaspoon pure vanilla extract
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, combine the mashed bananas, melted butter, granulated sugar, and brown sugar. Mix well until smooth.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the honey and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay. If using, fold in the walnuts or chocolate chips.
